In the winter, this breakfast is about the perfect way to start the day!  The one shown here is a packaged mix from Bob's Red Mill, which also makes gluten-free options.  Muesli is basically just much yummier oatmeal, with rolled oats, rye, barley, and some added goodies (like sunflower seeds, dates, and raisins). If you're in a big hurry to get out the door in the mornings, you can cook this the night before, and then microwave it for about a minute the next morning...much nicer than starting the day on a to-go mug of coffee and fumes!    

Makes: 2 servings of muesli


2 cups water
1 cup muesli mix
Milk or soy milk


In a small saucepan, bring the 2 cups of water to a boil.  Add muesli, reduce heat to a simmer, and cook uncovered for 10 minutes.  Remove from heat, cover, and let stand another 2-3 minutes before serving. Top with milk or cream.
