Letters From The Author's Mailbag

Dear Readers, 

I'm always so thrilled when my readers write in, especially when they've cooked some of the recipes on the site!  Here's a nice letter and photo submitted by a reader in Cedarville, Ohio, about Mom's Chocolate Zucchini Cake:

My reader from Ohio had this helpful advice regarding the recipe:

The recipe was very easy to follow and I liked that you included some of your own tips and notes...it cleared up some of my questions along the way! The cake turned out really yummy...the leftovers are delicious too (even for breakfast haha!). I did put a few extra walnuts and chocolate chips on too. The more, the merrier, right? Everyone at the BBQ loved it! I did have one friend who was allergic to corn products, so I had to substitute baking soda+cream of tartar in place of baking powder - still worked great.

(Here, I have to admit that I too eat this cake for breakfast, warm or cold, with coffee.)

I learn something new every day...I had no idea baking powder even had cornstarch in it!  According to this resource I found, the grain-free way to substitute for baking powder is to use 1 tsp. baking soda plus 1/2 tsp. cream of tartar for each teaspoon of baking powder.
