I'm always so thrilled when my readers write in, especially when they've cooked some of the recipes on the site! Here's a nice letter and photo submitted by a reader in Cedarville, Ohio, about Mom's Chocolate Zucchini Cake:
My reader from Ohio had this helpful advice regarding the recipe:
(Here, I have to admit that I too eat this cake for breakfast, warm or cold, with coffee.)
I learn something new every day...I had no idea baking powder even had cornstarch in it! According to this resource I found, the grain-free way to substitute for baking powder is to use 1 tsp. baking soda plus 1/2 tsp. cream of tartar for each teaspoon of baking powder.
Thanks to those of y'all who write in! If you have thoughts or comments related to recipes or articles here on the site, please share them with me (for possible future publication) by sending an email to fourcatsinthekitchen [at] gmail [dot] com.
