When you think of enchiladas, the first thing that comes to mind just might be those greasy, cheese-drowned creations most commonly found at Tex-Mex restaurants. I used to love those as a kid. Particularly the cheese enchiladas, so they'd have cheese inside as well as on top.
These enchiladas have all the yummy goodness of those ones, but without all the added grease, sodium and fat. You can even make them vegetarian by deleting the chicken and adding more beans in the filling.
